What can I use as a substitute for poblano peppers and chipotle peppers?
I want to make chicken mole here in the Philippines but Ive not come across chipotle (in adobo sauce, even) or poblano peppers here. Is there anything local that I can use?

I would think most any hot pepper would work.
Go shopping to some farmers markets or grocery stores where you are at and ask locals. You might come across something that is very good and completely different.

What is chipotle and how is it used?
I bought a bottle of Raspberry chipotle and thought it might be a good sauce to use on grilled salmon with roasted almonds? Is this something I would spread over the fish after it is cooked or while it is cooking? With what other meats could this sauce be used?
Answer: Chipotle is a smoked jalapeno pepper. It's used as a flavoring ingredient in many dishes. It is smoky and spicy.
I think it would be great on your salmon as mentioned! You probably want to put some on before and after it cooks.
I'm sure you could use any other meats, but pork would be especially good!

How spicy are chipotle peppers in adobe sauce?
I am making enchiladas and my husband wants me to add some chipotle peppers and there sauce. I can only handle moderately spicy so I am wondering how spicy these are? Its the kind in the can? I was thinking of chopping some into the meat and mixing some of the sauce into my canned enchilada sauce? Any idea how spicy they are? Should I make a separate batch without for me?
Answer: You should be fine if you add some to the meat and enchilada sauce, as chipotle and adobo sauce are midrange on the heat scale. Keep some on the side for your husband to spice it up if he wants, and have some sour cream on the side for you if you want to temper the heat a bit.

Enchilada sauce for about 20 to 25 enchiladas.
5 Large Jalepenos, Preferrably Hot (Very Very Hot if in Texas)
1/2 Can of Embasa Chipotle Peppers in Adobo Sauce (7 oz Can)
3.5 Pounds of Fresh Tomatillos
Head of Garlic
1/4 Level Teaspoon Ground Comino
2/3 Cup Cilantro
Large Onion
1/4 Teaspoon Salt (Optional)
Heat oven or grille to 450 F. From the tomatillos and jalepenos, and onions, remove stems, coverings, and the parts where the stem goes in. Keep the head of garlic intact. Slice the onion into 1/4 inch slices.
Separating as much as possible, place in a roasting pan the tomatillos, onions, and jalepenos. This may require two large roasting pans for best results. You may want to put foil between the vegetables and the pan to protect your pan. Do not cover the tomatillos, onions, and peppers with foil. Wrap the garlic with foil and make sure the garlic is roasted well separated from the jalepenos, tomatillos, and onions (so the garlic doesn't get soaked).
Roast tomatillos, jalepenos, onions and garlic for about 45 minutes. You may (hopefully) see some blackening--this is desirable. Collect all of juice and cooked vegetables from the tomatillos and jalepenos and put in a food processor. Remove paste from 4 large cloves of the roasted garlic and add to the food processor--be careful as the paste will be hot. Add cilantro, comino, chipotle peppers/adobo, and the optional salt. Blend in food processor until any chunkyness is just beginning to disappear.
Spread generously over enchiladas.

Answer: 1/2 pound Tomatillo, cut into strips
2 teaspoons Chipotle chiles, finely chopped
1/4 cup onion, finely chopped
2 tablespoons cilantro, finely chopped
2 teaspoons fresh lemon juice
1/2 teaspoon lemon zest
1 teaspoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon ground pepper
In a medium bowl, combine Tomatillo, chiles, onion, cilantro, lemon juice, lemon zest, lime juice, salt, and pepper. Cover and refrigerate, at least 1 hour and better a day or two, to allow the flavors to mix.

So I just got a job at chipotle. I start working there tomorrow. They told me I will be making $8.50 an hour. Answer: Chipotle chiles are sold in a jar, already swimming in a sauce called adobo sauce. You buy a jar or can of these and take one out and mash it or puree it. Actually, they are pretty soft and squishy any way, and you;ll be lucky to get one out in one piece. I usually just spoon it out.

Ok, So I have been convinced to try smoking jalepenos for homemade chipotle, now what?
I am so fed up with the price of chipotle this and that, when jalepenos are so cheap. So I was tipped off to this model here at Target.com and will likely get it or something similar.

I have never done anything like this before and would benefit from the wisdom of others. Does it require a gas stove? Do I have to purchase wood chips separately? Special wood chips? Is there an ingredient or whatever else (time consuming, dangerous, stinky, ???) that I need to know about that sends the cost of prepared chipotle through the freaking roof? Because they are really inexpensive.
I would love whatever advice you have about smoking jalepenos, and do NOT be afraid to get too basic.

Preparation:
First of all you need a good clean smoker. Grease, oils or food particles from past smokes will leave a harsh and undesirable flavor on the chilies. Some people who make a lot of chipotles have a smoker for just this. Once you have the smoker good and clean, start the fire. You will need to do a long smoke. Depending on the moisture in the chilies you might be looking at more than 24 hours so plan on adding coals to the fire periodically. Wash and dry the jalapeños. Remove the stems and make sure the jalapeños are in good condition. Place the jalapeños in a single layer on the rack and close the lid. Chipotles are best smoked with a fruity wood, but oak or hickory work well also. You will have good chipotles when the jalapeños have dried, become light in weight and a rich brown color. During the smoking process move the jalapeños around periodically and keep a close eye on the fire. Ideally you should keep a cool, smoky fire that doesn't cook the chilies before they dry. Try for a consistent temperature of about 180 degrees. There really is a art to this so don't be discouraged if it doesn't work out the first time.

Answer: >Habanero pepper has a definite flavor of its own. Chipotles are just smoked jalapenos...but habaneros are an actual varietal, not just a smoked chili pepper. Be VERY VERY careful with habanero, it is EXTREMELY potent, one of the hottest peppers on planet Earth. Another word for habanero pepper is Scotch Bonnet pepper because they are very small orange to orangish yellow little peppers, but MAN OH MAN are they ever HOT! You should wear gloves and never handle the peppers themselves with bare skin should you buy any because they can cause severe burns to the eye membranes or other sensitive parts of the body if you touch with your hands. But the habanero has a unique and distinct flavor unlike any other pepper, very VERY different!
All they do to make chipotle is to use a wood like mesquite and they hang the jalapeno peppers and smoke them. In Mexican cooking, they are mixed with Adobo sauce which is a chili-enchilada type sauce. You can probably find adobo sauce in the Mexican food section of your local grocery.

What can I do with leftover chipotle peppers in adobo sauce?
So, I used some of the adobo sauce in a dressing for fish tacos... but now I have these chipotle peppers left over because the lovelies I cook for are a little sensitive to the spicy-hot. Do you have any tasty recipe ideas? What can I do with these peppers?! Anything I can do with them for Thanksgiving?
Answer: If you like mushrooms and onions, here ya go...
Cut 2 portabella caps into large chunks, about 3/4" or so. Do the same with a couple of red onions (peel, slice thick, and crosscut).
Heat 3 tblsps. olive oil in a large skillet. Add your veggies and cook over medium low heat until just starting to soften. Stir in your leftover chipotles and sauce.
Heat your oven to 375 F. Use a ceramic flan pan or round casserole dish, lightly oiled. Turn the veggies into it. Sprinkle with 1 1/2 tsps. Mediterranean oregano and top with 1 1/4 C. shredded Monterey Jack cheese. Pop in and bake 20 minutes or so. Remove, let stand 3-5 minutes and serve.
Great side dish with pork roast, carne asada, or with a milder chicken dish when having company and you still want something with a little kick. Leftovers, if you have them, are great reheated with scrambled eggs and tortillas for breakfast.

How do I find the intrinsic value of Chipotle stock, using the P/E model & the CAPM model?
I need to find what I forecast the firms (Chipotle) price to be in the future for my one class, using the P/E model and the CAPM model. I understand what Price to Earnings ratio is, and the equation of CAPM to find the expected return, but I just dont understand how to use this information to come up with a future price of the stock. If you could give an explanation of how to do this and step by step guidance.

Answer: A. P/E Model:
1. The price/earnings ratio (P/E) is the best known of the investment valuation indicators. The P/E ratio has its imperfections, but it is nevertheless the most widely reported and used valuation by investment professionals and the investing public. The financial reporting of both companies and investment research services use a basic earnings per share (EPS) figure divided into the current stock price to calculate the P/E multiple (i.e. how many times a stock is trading (its price) per each dollar of EPS).
2. A stock with a high P/E ratio suggests that investors are expecting higher earnings growth in the future compared to the overall market, as investors are paying more for today's earnings in anticipation of future earnings growth. Hence, as a generalization, stocks with this characteristic are considered to be growth stocks. Conversely, a stock with a low P/E ratio suggests that investors have more modest expectations for its future growth compared to the market as a whole.
3. The growth investor views high P/E ratio stocks as attractive buys and low P/E stocks as flawed, unattractive prospects. Value investors are not inclined to buy growth stocks at what they consider to be overpriced values, preferring instead to buy what they see as underappreciated and undervalued stocks, at a bargain price, which, over time, will hopefully perform well.
